The Cornwall Cheese & Butter Management Board was created in 1889. By the end of WWI, the Board had 38 members and sold $60,000 in dairy products weekly. That’s over $1,218,000 in today’s money! It was the largest cash industry in Cornwall and the United Counties. The Cheese & Butter Board was the largest dairy industry in Canada with 2,000 milk producers in the Three United Counties alone. During WWI and WWII thousands of tons of cheese were exported to England where people suffered from strict food rationing.
